Margie.Dear Margie, Olive oil is a very healthy cooking medium because of its high content of polyunsaturated fatty acids. It reduces risk of hypertension and other cardiovascular diseases. Prevalence of depression is much less in individuals taking olive oil. Resistance and stamina of the body is increased with use of olive oil due to its antioxidant properties.

It is also known to retard or stop development of Alzheimer’s disease. Raw olive oil used over salads has all these properties. But even when used for deep frying, olive oil is better than other oils.
