Whether you have these for dinner or have them as a starter meal, you do not want to stop eating. There’s nothing quite as tasty as a crispy potato skin.

Mebs Kara, General Manager of Accord Hotel/OC Pizza Bar and Grill, says the potato skin is a simple food to prepare but very delicious.

"Potato skins are a snack food or appetizers. They are made of slices of half-spherical pieces of potatoes with the skin left on one side having beef and pico de gallo sauce topped with cheese,” he added. Prep time: 15 min Cooking time: 10 min

What you’ll need

•4 potatoes scrubbed and thoroughly dried•Pico de gallo•Cheese toppings•Crumbled beef•Guacamole

Procedure

•Slice each potato in half lengthwise. Using a spoon, scoop out the flesh, leaving about 1/4 inch intact; reserve the flesh for another use.

•Separate the cut halves by dividing them in two with four halves on one side and four others on another.

•Place pico de gallo sauce in the first four and fill them up to half way the sliced potato.

•Place crumbled beef in the other four and fill up to half.

•Fill all the eight halves with cheese toppings.

•Place in oven until the cheese is melted. Serve immediately with guacamole and arrange the food well for proper presentation.

This is a quick snack but it is perfect for someone who doesn’t have the time to make a full lunch or dinner meal.
