A quesadilla is basically a Mexican-style stuffed pancake, like a toasted sandwich, made with two tortillas containing cheese-based filling, chicken or beef and pico de gallo sauce then toasted through and served with guacamole. 

Mebs Kara, general manager of Accord Hotel/OC Pizza Bar and Grill, says the quesadilla is one of the foods enjoyed by Americans and Rwandans with a vegetarian option as well as chicken or beef.

What you’ll need

2 tortillas Pico de gallo sauce Marinated and grilled chicken or beefCheese Guacamole

Procedure

•Place two tortillas on a flat surface and sprinkle cheese on only half of the tortilla surface. •On that same half, spread the pico de gallo sauce and flatten the mixture. •Top it all up with the marinated grilled chicken or beef and flatten the mixture. All this should still be placed on the same half of the tortilla. •Sprinkle more cheese on top of it all. •Fold the tortilla as a sandwich and hold it firm together just before toasting it and cut it in half before serving.

After a few seconds, take it out and it is ready to bite. Mebs also advises to have a good presentation of the quesadilla which makes it look more appealing. These two tortillas that make up the quesadilla are filling for someone that wants to have a light but energising lunch.
