3 onions chopped in a desired shape
1 teaspoon salt
4 tablespoons oil for stir-frying,
4 cups of cooked rice
2 tablespoons of soy sauce
Cut the onions in a desired shape as well as the green pepper. Lightly beat the eggs with the salt and pepper.
Heat the frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Gently stir the mixture, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
Add 2 tablespoons oil. Add the cold cooked rice; stir the mixture for a few minutes. Add the soy sauce when the rice is heated thoroughly; add the scrambled eggs back into the pan. Gently stir the mixture and serve it when it’s hot.
