A cup of long-grain rice
A cup of fresh green peas
A cup diced chicken
Mayonnaise, Salt and pepper
Lettuce or salad greens and sliced tomatoes
Vegetable oil and vinegar
Diced seeded cucumbers and thinly sliced green onion
Boil the rice separately and cook the peas as well. Wait for the peas to cool and drain it.
Get a large bowl; pour the rice and the peas in the bowl. Add the chicken, mayonnaise, vinegar and pepper. Avoid over stirring the mixture.
Also add the minced garlic. Serve the mixture on salad greens or a bed of lettuce, and garnish with sliced tomatoes, cucumber and onions.
